Only the finest ingredients are good enough for Grifoncino cocktails. “It’s not as if we’re trying to use anything up,” says head barkeeper Christian Gruber. This is a man who thinks of everything, including how his guests will feel the morning after. Every single cocktail is quality-tested before it crosses the counter.
From the Blue Bar to Bolzano
Cocktail maestro Ernesto Lechthaler, a native of South Tyrol, brought Christian Gruber to Bolzano in 2008. It was a stroke of genius. Austrian-born Christian was working in London at the time, in the Blue Bar ¬– the capital’s most popular cocktail workshop. “I’d always worked in bars but that’s where I really learned how to mix cocktails,” says Christian. In Bolzano, he got the opportunity to rebuild the local scene according to his own ideas.

The Grifoncino is everything Christian dreamed of: stylish, intimate, yet with all the cosmopolitan flair of a true hotel bar. “I can experiment here,” says Christian, who reckons ninety percent of the cocktails on the menu are his own creations. Many are based on gin, prosecco and vodka (Christian is a self-confessed vodka fan). ‘Summer night in Bali’ is his latest creation and current favourite – bitter, sweet and spicy all at once.
